Air Fryer Creole Shrimp Dinner
- 1 (16-ounce) package andouille sausage, sliced crosswise ½ inch thick
- 1½ cups small broccoli florets
- 1½ cups ½-inch-sliced half-moon yellow squash (about 1 squash)
- 1½ cups 1-inch-chopped orange bell pepper (about 1 bell pepper)
- 1 tablespoon minced garlic
- 2 tablespoons vegetable oil, divided
- 2 teaspoons Creole seasoning, divided
- 1½ pounds fresh jumbo shrimp, peeled and deveined and patted dry
- Garnish: chopped fresh parsley
- If preheating is recommended by your air fryer manual, preheat fryer to 375°.
- Place andouille in air fryer basket. Set temperature to 375°, and cook until crispy, about 12 minutes. Set aside, and keep warm.
- In a large bowl, toss together broccoli, squash, bell pepper, garlic, 1 tablespoon oil, and 1 teaspoon Creole seasoning.
- Place half of broccoli mixture in air fryer basket. Set temperature to 375°, and cook for 6 minutes. Repeat with remaining broccoli mixture. Add to andouille.
- In a large bowl, toss together shrimp, remaining 1 tablespoon oil, and remaining 1 teaspoon Creole seasoning.
- Place half of shrimp in air fryer basket. Set temperature to 375°, and cook until pink and firm, 6 to 7 minutes. Repeat with remaining shrimp. Toss with andouille mixture, and garnish with parsley, if desired. Serve warm.
